Step 1
chop the garlic cloves with a knife, do the same with the shallot. heat the olive oil in a pan and fry the garlic and onion until golden brown

add there diced eggplant, peppers and zucchini, as well as halves of cherry tomatoes. fry the mixture for a minute constantly stirring, then add 1-2 ladles of boiling water so that the vegetables simmer in it. cover with a lid and leave on the low heat for 10 minutes so the aubergine absorbs water and softens. stir every 2-3 minutes

add tomato sauce, chopped olives, fresh basil leaves and spices to the vegetables, warm over low heat for 5 minutes

in the meantime, boil the pasta in salted water. turn off the heat a minute before it’s al dente. drain the water and put the pasta to the sauce to warm everything together. stir for 1 minute and remove from the heat
