These super easy crepe pancakes were made by mistake and now it’s the only way my husband will eat them. They edges are crispy and the inside gooey.

In a bowl mix enough water into the pancake mix until it resembles the consistency of heavy cream. Continue mixing another 2 minutes to release the gluten. This is what gives it the gooey crepe like middle. In a large pan over medium low heat, smear the pan with a little butter then immediately pour out a 1/2 of batter into the pan and swirl it so that the batter spreads out wider. Let cook until the edges are dry and batter bubbles. Flip and cook another 10 seconds. Place on plate and add a tap butter. Continue make three more pancakes stacking them as they cook onto each other with butter on each. Sprinkle with the confectioners sugar and syrup.
