Instructions
Step 1
In a bowl, whisk olive oil with sugar for about 3/4 mins or until smooth.
Step 2
Incorporate eggs one by one, whisking vigorously.
Step 3
Keep whisking and add your flour in, milk and finally the zest of 1 lemon and baking powder.
Step 4
Transfer everything in a cake tin, previously buttered and floured.
Step 5
Bake for about 40/45 mins (the first 20 mins at 160C/320F and the final 20 mins at 180C/360F).
Step 6
Serve with some icing sugar on top. Buon appetito!
