Instructions
Step 1
Finely chop the garlic cloves.
Step 2
Coarsely chop the 3 tomatoes.
Step 3
Heat olive oil and pasta water at the same time (in 2 different containers).
Step 4
When the oil has heated up, brown the garlic and add the red chili. You can remove the chili after 1 or 2 minutes if you want (for those who don't like it too spicy). Keep the heat high. Then add the tomatoes, salt to taste, and add the pepper, sugar and parsley in order. Crush the tomatoes a little with a wooden spoon. This should not cook for more than 10 - 15 minutes.
Step 5
Meanwhile, put the penne in boiling (salted) water and cook for the time needed.
Step 6
Once the pasta is cooked, pour it over the sauce in the cooking pot and mix on low heat.
Step 7
Add a drizzle of oil just before serving and some grated (real) parmesan cheese. Bon appétit !
