Step 1
Chop the broccoli and mushrooms. Peel the garlic.

Add your pasta to boiling water with a sprinkle of salt. Set a timer for 12 minutes.

Cook the broccoli with the pasta for the last 4 minutes of cooking time. Drain once finished.

In a separate pan fry the mushrooms in olive oil (for around 4-5 minutes). Season with salt and pepper. Mince the garlic and cook for a further 1 minute.

Step 5
Reduce the heat and add 150g creme fraiche and vegetable stock (which has already been dissolved in water). Simmer until it thickens. Add cornflour if the sauce is especially runny. After, remove from heat and stir in 40g Parmesan cheese.

Add the pasta and broccoli to the sauce. Stir and serve into bowls.
