Ingredients

1carrot
peeled and cut into 2-inch matchsticks
2 tablespoonsrice vinegar
¼ cupmayonnaise
¼ cupsriracha
divided
1 tablespoonhoney
1 tablespoonsoy sauce
1.5 poundsshrimp
extra-large, 21 to 25 per pound, peeled, deveined, and tails removed, cut into 1/2-inch pieces
¼ teaspoontable salt
2 tablespoonsvegetable oil
4scallions
white parts minced, green parts sliced thin on bias
1 headBibb lettuce
leaves separated
Instructions
Step 1
Combine carrot & vinegar; set aside, tossing occasionally. Combine mayo and 2 tbsp sriracha in second bowl. Whisk honey, soy sauce, & remaining 2 tbsp sriracha together in third bowl.
Step 2
Pat shrimp dry with paper towels & sprinkle with salt. Heat oil in 12" nonstick skillet over med-hi until just smoking. Add shrimp & scallion whites. Cook until shrimp are spotty brown and just cooked through, about 3 mins. Add honey mixture and cook until sauce is thickened and clings to shrimp, about 1 min.
Step 3
Serve: fill lettuce leaves with pickled carrots, shrimp mixture, sriracha mayonnaise, and scallion greens.
