Black Bean & Quinoa Meatballs

These meatballs are a family favourite and not one of them guessed they were made out of black beans. All plates clean - a winner!

Instructions

Step 1
To make the meatballs, cook the quinoa in a large pan of boiling water for 20 minutes. Then drain really well to remove excess water and cool.
Step 2
Spray the base of a frying pan with the spray oil and 2 tablespoon water & then cook the onion for 10 minutes. Add the garlic and cook for a further 5 minutes ensuring all the water has evaporated and the onions are soft.
Step 3
Once the onion mixture has cooled, add to a food processor along with the quinoa, beans, egg and breadcrumbs. Whizz until the mixture has combined. Chill the mixture for 10-15 minutes.
Step 4
Using clean hands, form the mixture into 18 balls and lay on a tray and put back in the fridge until ready to cook. Whilst chilling make the sauce & cook the rice.

Sauce

Step 5
Tip the tomatoes into a saucepan. Using the tomato can, fill to the top with water and add to the saucepan, along with the chilli flakes and red lentils. Season and bring to the boil. Then simmer for 20-30 minutes until the sauce becomes thicker.

Rice

Step 6
Cook the rice in a large pan of lightly salted water following the pack instructions. Drain well.
Step 7
Spray the frying pan generously with spray oil. Add the meatballs carefully and keep turning them to cook. They should turn crispy golden brown.
Step 8
Divide the rice equally between 4 plates, add the sauce and meatballs on top!
