Crispy Juicy Pork Belly with spicy dipping sauce
Crispy pork belly with Thai chili sauce (Nam Jim Jaew)
This came out so juicy, crunchy and delicious! The Thai dipping sauce takes this recipe over the top.

Ingredients

Spices for the pork marinade:
1 tspsalt
½ tspgarlic powder
1 ½ tspfive spice powder
½ tspwhite pepper
1 Tbspbrown sugar
1 tspsalt
1 Tbspvinegar
Dipping sauce:
Instructions
Step 1
Mix spices together for the marinade.
Step 2
Prep the pork belly:

Trim off excess fat and uneven pieces on the meat side. (I should have asked for a better piece from the Asian market but I was in a hurry and didn’t pay attention).
Step 4
Poke holes to the skin with fork or sharp skewer. It is tough skin so use your strength here :) Then cut slits on the skin side but not all the way to the meat, just a thin slice on top. Makes cutting easier later!
Step 5
Make 1/2 inch cuts on meat side so the marinade gets into the meat. Rub the marinade into the meat and then pat the skin side clean to remove any excess moisture or seasoning. Brush on the salt and vinegar to the skin and make a tin foil boat for the pork belly. Refrigerate this for 24 hours (for best results) This helps dry the skin for that crispiness!

Cooking:

Bake at 350 degrees for 1 hour. Remove and blot off any moisture on the skin, add one more coating of the vinegar mixture. Return to oven and broil on lower rack for 10-15 minutes. (Keep an eye on it bc ovens vary in temperature) Use foil to cover spots that are cooking unevenly so it doesn’t burn in that section.
Step 8
Let this rest for 15 minutes then cut along the slits on the skin side and then into bite sized pieces.

Thai dipping sauce:

Combine fish sauce, lime, sugar, Thai chili powder, and toasted rice powder then mix to incorporate everything together. Taste and adjust to your liking. Add cilantro and green onions.
Step 11
Serve right away while it’s still crispy!
