For the roasted garlic cloves:

Step 1
Preheat oven to 160C
Step 2
Peel the garlic cloves and transfer them to the ovenproof baking dish. Add chilli infused olive oil just to cover the garlic(about 200ml)

Add rosemary sprigs on top and cover with aluminium foil or a lid. Roast for 40-50 minutes covered, then remove the foil and roast for another 10 minutes. When ready remove from the oven, discard the rosemary sprigs and let it cool. Then transfer to the jar with the lid.

To toast the bread, preheat the oven to 200C.

Slice ciabatta bread in half lengthwise. Drizzle with olive oil and sprinkle with salt.

Bake for 8-10minutes or until golden.

To assemble, take 2-3 roasted garlic cloves and spread them over the toasted ciabatta half. Repeat with the other half.
Step 8
Cut avocado in half, deseed and using the spoon remove the skin. Then slice and place on top of the toast. Drizzle with olive oil, then sprinkle with salt, pepper, chilli flakes and thyme leaves.
