Step 1
Preheat the oven to 180C.
Step 2
Smother the chicken breasts with pesto on all sides (and through the middle if desired). Place the chicken in a casserole dish, drizzle olive oil over the top of the chicken breast and bake for 20 minutes.
Step 3
At 20 minutes, remove the chicken from the oven, and add tomatoes to the dish, arranging around the chicken. Return the chicken and tomatoes to the oven and bake for a further 20 minutes (until the chicken is cooked through).
Step 4
Meanwhile, cook the rice by combining 1 cup brown rice with 2 cups water in a saucepan. Bring the water to boil over high heat, then turn the heat down to low and allow to simmer until the water is absorbed (about 10-15 minutes).
Step 5
Add the olive oil to a skillet and heat the garlic until fragrant. Add the silverbeet and mushrooms to the pan and saute in the garlic oil.
Step 6
Serve the sauteed veg and chicken on a bed of rice. Top with nuts, such as walnuts or pine nuts. Drizzle with extra virgin olive oil, a squeeze of lemon juice, and cracked black pepper.
