Instructions

Step 1
preheat the oven to 400°F and line a rimmed baking sheet with parchment paper

In a large bowl, combine all the meatball ingredients, except for the feta cheese and use your hands to incorporate. Carefully fold in the feta.

Form the mixture into 16 1 inch meatballs and place on the lined baking sheet spaced at least 1 inch apart

Bake meatballs for 20 to 25 minutes, until the outsides are browned and the internal temperature reaches 160°F

Let cool for five minutes, then cut each meatball into three slices

To assemble the wraps, divide the meatball slices evenly among the lettuce leaves top with tomato, red onion slices, and tzatziki sauce

For the tzatziki sauce

Peel and grate 1/2 large cucumber

Press the grated cucumber within a paper towel to remove the excess liquid

Combine the cucumber with the remaining ingredients in a medium size bowl

For the best flavor, cover and chill the tzatziki sauce in the refrigerator for 1 to 2 hours before serving. Leftovers will keep for up to three days.
