Instructions

Step 1
Heat oil in pan. Add onion and cook until softened. Remove and set aside.
Step 2
Heat more oil in pan and add potato slices, rosemary and spices and cook, tossing and stirring frequently for 10 minutes until softened and lightly golden.
Step 3
Layer the potato slices in a large pie dish with the onions. Pour over stock and season with salt and pepper.
Step 4
Roll the pastry out on a lightly floured surface. Cut shape and place over the pie dish to cover filling.
Step 5
Bake in a preheated oven (220 Fan) for 25-30 minutes until the pastry is golden and the potatoes are tender.
