Instructions
Sweat the onion
Step 1
Start by chopping the onion in small cubes, then place in a bowl with a heavy pinch of salt and let rest for 10 minutes to allow the juice to come out and reach a milder smoother flavour

Step 2
Chop the cilantro finely, the tomatoes in small bits and the garlic and chili finely. Add it all to a bowl alongside the lemon juice

Step 3
Rinse and add the onion to the bowl, followed by the olive oil, salt and pepper. Mix and cover the bowl to let the flavours develop, and here you go!
