Step 1
Preheat oven to 350F
Step 2
To a pan brown your meat. Once cooked through add in taco seasoning and water and stir.
Step 3
Add in rotel, sour cream, and Velveeta. Stir until combined and cook on medium heat.
Step 4
Once it starts to bubble add in minute rice. Switch heat to low, cover, and cook for 5 minutes.
Step 5
Stir and then set aside.
Step 6
Add peppers to a microwave safe dish with 2 tbs water and cook for 6-7 minutes until softened.
Step 7
To a 9X13 baking dish add tomato sauce on bottom a and then the peppers. Fill with rice mixture.
Step 8
Top with shredded cheese.
Step 9
Bake for 15-20 minutes
