Instructions
Step 1
Heat olive oil in saucepan on high.
Step 2
Add onions and stir. Reduce heat to low-medium.
Step 3
Add sea salt, cracked black pepper and oregano. Cook, slowly, for approximately 15 minutes, stirring occasionally until onions are clear and soft.
Step 4
Add garlic. Simmer for another 3 minutes.
Step 5
Add tomato paste and sugar. Stir frequently until the metallic smell of the paste has disappeared.
Step 6
Bring heat up to high and add wine. Stir immediately and cook off the alcohol.
Step 7
Add tinned tomatoes and ¼ cup of water. Bring to the boil and reduce to a simmer.
Step 8
Allow to cook slowly for at 1-2 hours.
Step 9
Season to taste. Remove from heat. Add basil.
