Instructions

Step 1
1. Season chicken thighs to taste with salt, pepper and garlic powder.
Step 2
2. In a cast iron skillet, heat oil over medium high heat and sear chicken thighs on both sides.

3. Remove browned chicken thighs from the skillet and add sliced onions.
Step 4
4. Season with salt and pepper and deglaze with white cooking wine.
Step 5
5. Cook onions until softened and add garlic, thyme, bay leaves. Add chicken broth and cover to simmer.
Step 6
6. Add chicken thighs back into the skillet and cover for 5-7 mins.
Step 7
7. Add Gruyère and mozzarella cheese on top and bake on 375 in the oven until the cheese is brown and bubbly.
Step 8
8. Serve with mashed potatoes.
