Southern Style Cubed Steak

Cubed steak with gravy and mashed potatoes is a classic Southern dish and was one of the favorite dishes that my mother would be for me. I serve mine with cabbage, mashed potatoes and hot water cornbread.

Step 1
1. Season cube steaks with salt, pepper, garlic powder and onion powder.
Step 2
2. In a medium bowl, Combine flour the same seasonings used to season three cubed steak. Whisk until well combined. Set aside 1/4 cup of the seasoned flour.
Step 3
3. Dredge the cube steaks in the flour mixture, pressing the flour into the steaks; set aside. Add only enough oil to just coat the bottom of a cast iron and heat over medium high heat. Brown steaks on both sides; remove to paper towel lined plate to drain.

4. Remove extra oil if necessary. *you only need enough oil to cover the bottom of the skillet to make the gravy.

5. Sprinkle in reserved 1/4 cup of flour; cook and stir for about 2 minutes.
Step 6
6. Slowly stir in water, scraping the bottom of the skillet well, and adding enough additional liquid until the gravy reaches the desired consistency. Taste gravy and add additional seasonings if needed.
Step 7
7. Add sliced onions and reduce heat to a low simmer until the onions are soft. Return cube steaks to skillet and coat them in the gravy. Cover and simmer on medium low for 20 minutes to allow the gravy to tenderize the steaks.
Step 8
8. Serve over mashed potatoes with boiled cabbage and cornbread.
