Gourmet Tuna Noodle Casserole

Upscaling a classic...Tuna Noodle Casserole.. Anything, including the kitchen sink can be added. I've got lots of vegetables, topped with cheese and peas, then the finishing touch Potato Chips...yeah you heard me.. Try this one for Lent.

Instructions

Step 1
Preheat oven to 400 degree F
Step 2
In a large skillet sauté add 4 Tbsp. butter with oil; then sauté onion, carrots, fennel, celery and peppers. Add roasted garlic.

Add flour and warmed milk and heat till just boiling. Add in mushrooms and spinach and seasonings.

Fold in tuna and noodles and pour into 9x13 buttered dish.

Cover with cheese and peas.

Melt remaining 4 tbsp butter with breadcrumbs and top casserole.

Place in oven for 25 minutes.
Step 8
Carefully remove and sprinkle chips and parsley on top and bake for an additional 10 minutes. Let cool at least 5 minutes before serving. Enjoy!
