WHITE BEAN SMOOTHIES WITH MANGO, COCONUT, MINT, AND GINGER
This pale green smoothie, a twist on a mango lassi, is a little tart and a little spicy-cool from the mint-ginger twofer, and it gets extra fiber and creaminess from white beans, which fade into the background. This is a good use for canned beans, which have all the nutrition but less flavor than those you cook at home from dried with aromatic vegetables added. Note: If you use frozen mango cubes, first try this without any ice, then add some to the blender if needed.
