Shakshuka on Potato Waffles

Instructions

Step 1
Stick your potato waffles in the oven or however you cook them as per instructions
Step 2
Get your pan then add the olive oil
Step 3
Once oil is hot add the onions, put on medium high heat and stir continuously not allowing onions to burn

Saute until soft then add the garlic
Step 5
Then onions turn golden add the tomatoes

Cook for two minutes then add the capsicum

Cook for another two minutes then add the seasoning

Mix and and then add green chillies

Once seasoning is mixed in add the harissa paste and tomato paste

Mix this altogether and combine well

After about two minutes add the water

Stir everything together, put it on medium high heat and bring to a boil

Once you've got it to a boil cover with lid on low heat for five minutes

Sauce should be slightly thickened up, don't worry if it's still slightly watery as we're going to cover again

Make four wells in the sauce

Crack in eggs in a small dish or ramekin then add to pan one by one

Sprinkle a small pinch of salt on each egg

Garnish with fresh parsley

Cover again with lid on low heat for five mins

At this time your waffles should be done

Mine weren't done hence my eggs went dry

Plate it up, place a portion of shakshuka on top of each waffle

Garnish with Aleppo Pepper and fresh parsley
