Instructions
Step 1
Arrange chicken thighs in the bottom of the slow cooker, stacking if necessary,

Pour over the honey, soy sauce, vinegar, minced garlic, and oregano. Stir to coat the chicken before covering with a lid and leaving for an hour.

Step 3
At one hour stir the chicken to reposition any meat which wasn't covered by the liquid before returning lid and leaving to cook for the final 3 hours.
Step 4
Remove chicken from the sauce with a slotted spoon, it should fall apart. Transfer to a chopping board discard the skin, and shred the meat with two forks.
Step 5
Strain the sauce into a large stockpot and reduce by about 50% over a medium heat
Step 6
Mix the cornflour into a paste with a small amount of warm water then stir through the sauce to thicken. Once the consistency is to your liking add the chicken to the pan and stir through the sauce
Step 7
In a dry skillet, toast sesame seeds until they just begin to colour.
Step 8
Serve over fried rice, and garnish with the sesame seeds and scallions.
