Instructions

Step 1
Fry the bacon for 2 minutes until cooked and then chop into small pieces
Step 2
Melt the butter in a non-stick pan, add the eggs and cook gently until scrambled, fold in the chopped bacon and season to taste
Step 3
Heat the tortillas in a dry trying pan then lay on a plate and top equally with the bacon and egg mix, avocado and coriander
