Instructions

Step 1
Preheat the oven to 300 . Line two baking sheets with parchment paper, oil slightly and set aside. (Baking spray works well)
Step 2
Combine all the spices. In a large bowl, whisk the egg white until foamy and until it forms equal sized bubbles, about 3 minutes.
Step 3
Add in the coconut sugar, spices, and salt to the egg white and whisk until incorporated. Add in the nuts and mix with a spatula until the nuts are completely coated.
Step 4
Spread the nuts between the two parchment lined baking sheets in an even layer.
Step 5
Transfer to the oven and roast until dry and golden brown, 35- 40 minutes.
Step 6
Halfway through, remove the pans from the oven, stir the nuts around with a rubber spatula, then return to the oven to finish roasting.
Step 7
Remove the nuts from the oven and allow them to rest on the baking sheets for 10-15 minutes, then break into clusters and store in glasses.
