Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
In a medium sized bowl, mix together the banana, brown sugar, cinnamon, flour and oats. You can do this with a fork or with your hands (I did both). *this recipe will also work with an unripe banana it will take a bit more time to mix*
Step 3
Add carrot purée and mix well. It will create a thin dough but should still hold its shape.
Step 4
Place the batter onto a lined cookie sheet in 2 tbsp sized dollops.
Step 5
Bake for 15 minutes and let cool completely before transferring to a wire rack.
Step 6
Pair up 2 cookies that are similar shape. Frost one of each pair with the cream cheese on the bottom. Press the other cookie on top of the frosting to form a sandwich.
Step 7
Roll the filled cookie on the chopped walnuts until all edges are covered.
