12 ozground turkey
lean
¼ cupoat flour
¼ cuponions
minced
2 Tbspmozzarella cheese
low-fat shredded
2 tspchives
minced
salt
black pepper
½ cupBBQ Sauce

Instructions
Step 1
In a bowl combine the turkey, oat flour, onions, mozzarella cheese, chives and salt and pepper, to taste. Form into meatballs about 1-2 Tbs. in size.
Step 2
Heat a skillet or a pan over low/medium heat. Spray with cooking spray and place meatballs in the pan; cover. Rotate frequently until all sides are browned evenly and meatballs are cooked through. Remove from heat and add the BBQ sauce. Stir until all the meatballs are well coated; keep warm.
Step 3
Place the cauliflower florets into a pot of water and bring to a boil. Boil for 6 minutes or until tender. Drain and pat dry. Place the cauliflower, laughing cow cheese, almond milk and butter in a food processor or blender; blend until smooth and creamy. Weigh the mash and divide the weight by four to get the amount needed to fill one serving.
Step 4
Divide the meatballs into four equal portions. Serve meatballs over cauliflower mash and enjoy the pineapple on the side.
