Instructions
Step 1
Preheat oven to 200C(fan)
Step 2
Slice tomatoes if using big one or halved them if using cherry tomatoes. Chop chili pepper and cut off the top of the garlic cloves.
Step 3
Splash 1tbsp olive oil over the bottom of the ovenproof dish. Place in your tomatoes, chili and garlic. Add Goat cheese in the middle and sprinkle with salt, mix of peppers and oregano. Drizzle with 1tbsp olive oil and add thyme sprigs.
Step 4
Bake for 35 minutes at 200C(fan)
Step 5
Meanwhile prepare the bread. Slice baguette, transfer to the baking tray and drizzle with remaining olive oil.
Step 6
Bake for 10-15minutes or until golden brown.
Step 7
When tomatoes are ready, squeeze the garlic and discard the thyme. Add sliced olives and mix all together.
Step 8
Garnish with thyme leaves and serve with toast bread.
