Instructions
Step 1
Heat 2tbsp of oil in a pan over a medium heat and fry the onion gently for 10-12mins. Add garlic and chilli flakes and cook for 1 min.
Step 2
Add tomatoes and sugar, season to taste. Simmer uncovered for 20 mins or until thickened, then stir through mascarpone.
Step 3
Heat 1tbsp of oil in fry pan. Season chicken and fry for 5-7 minutes or until cooked through.
Step 4
Heat oven to 220C/200C fan/gas
Step 5
Cook the penne as per directions. Drain and toss with remaining oil.
Step 6
Tip pasta into medium sized oven proof dish. Stir in chicken and pour over sauce.
Step 7
Top with the cheese, mozzarella and parsley.
