For the tofu
600gextra firm tofu
1 Tbspolive oil
1juice of lemon
1 ½ TbspApple Cider Vinegar
1 ½ Tbspnutritional yeast
1 ½ tsponion powder
¾ tspgarlic powder
⅓ tspdried dill
¾ tsporegano
½ tspsalt
For the couscous
1 cupwhole wheat couscous
uncooked, cooked with 1.5 cups water & pinch of salt
1 cupcherry tomatoes
halved
0.5cucumber
shredded
¼ cupkalamata olives
½ cupdill
fresh chopped
0.25red onion
diced
For the tzatziki
250gsilken tofu
1clove garlic
1 ½ Tbsplemon juice
1 ½ TbspApple Cider Vinegar
2 tspdried dill
1 tsponion powder
½ tspsalt
¼ tsppepper
0.5cucumber
grated

Instructions
Step 1
First make the tofu marinade and add in the tofu for at least 10 minutes. Pan fry until golden.
Step 2
Cook the couscous and let it cool and mix in the chopped veggies
Step 3
To make the tzatziki blend all the ingredients together then mix in the grated cucumber.
Step 4
Assemble your meals by dividing your ingredients into 3 containers. Add the tzatziki on top but be sure to keep it separate from the lettuce so it does not wilt.
