TIRAMISU MOUSSE CAKE

We are making Tiramisu Mousse Cake. The classic Italian tiramisu recipe has lightly sweet and rich mascarpone filling layered with sponge fingers soaked with a coffee and topped with a dusting of cocoa powder. It's practically perfect and delicious. I will be keep it real but adding luxurious creamy Egg Yolks custard and whipping cream

Instructions

Step 1
Add the egg yolks and sugar to a double boiler. Place over a pot of simmering water making sure the water does not touch the bowl.
Step 2
Whisk over medium heat until sugar has dissolved and the mixture is light yellow in color and thickened a bit . This step will take around 10 minutes.
Step 3
Let it cool for 5/6 minutes.
Step 4
Transfer the mascarpone to a large bowl and whisk to break through for few seconds.
Step 5
Add the cold double cream to the bowl. Beat until the whipped cream has stiffer peaks.
Step 6
Combine the freshly ground coffee beans (you can use espresso or instant coffee) and boiling water in a medium bowl then mix together and set aside to cool down a bit.
Step 7
Fold the whipped cream into the mascarpone mixture.
Step 8
Pour the egg yolk mixture into the mascarpone and add vanilla extract and whisk until combined.

For the Assembling

Step 9
Take Silicone Cake Pan Mold. add half of the mascarpone mixture on bottom and smooth out by tapping
Step 10
Cut sponge fingers in half. Dip the top and bottom of your lady fingers briefly in the coffee.Arrange the lady fingers in the around.
Step 11
Add the remaining mascarpone mixture and smooth out.
Step 12
Wrap with cling film and Freeze for couple of hours before serving.
Step 13
Take out and remove the silicone mould. Place on serving dish.
Step 14
Dust top with cocoa powder and serve.
