Ingredients

1 x 24 ozadzuki beans
4 qtswater
2chicken boullion cubes
1 packagesmoked pork neck bones
1red onion
1carrot
large
1green bell pepper
shiitake mushrooms
rehydrated, but actually just use fresh
2Thai chile peppers
2 tablespoonskosher salt
5 clovesgarlic
2 tablespoonsginger
sliced
1 bunchscallions
whites and greens separated
1 tcumin seeds
1 tcoriander seeds
Instructions
Step 1
In a really large pot, cover beans with salted water and bring to a boil. Reduce heat and simmer 20 minutes or until soft.
Step 2
Meanwhile, heat a pan to medium high. Dry toast any whole spices, then crush with mortar & pestle. Set aside. Stamp together a ginger garlic paste as well.
Step 3
In the pan, saute onions with salt, spices, and a lot of butter. Stir in ginger garlic paste and cook for 1-2 minutes, then add contents of pan to beans.
Step 4
In the same pan, sear pork on all sides until delicious and add to pot.
Step 5
Simmer the whole mess until pork is falling off the bone, about 90 minutes. Shred pork; discard bones and cartilage. Season to taste.
