Step 1
Soak soy lecithin in half the water, soak until grains are mostly dissolved (5-10min) combine flours together with salt, make a well in the center, mix oil and water/lecithin in center. incorporate all the flour using additional water if needed. cover completely or put in a plastic bag, allow to rest at least 30 minutes, give it a quick knead and run through a pasta maker until desired thickness. cut into appropriate sized squares for your rolls.
