Step 1
Pan fry the aubergine in a dry frying pan over a medium heat for a few minutes and then add the red onion and a splash of sesame oil.
Step 2
Fry for a few more minutes to soften the onion and then add the sweetcorn, chilli flakes, garlic, curry powder, turmeric and seasoning.
