Instructions
Step 1
Cut baby bok choy in half, then wash and dry.
Step 2
Mince garlic, shallot, and ginger.
Step 3
Heat a pan with some oil till it gets hot. Add bok choy cut side down and sear. Once the bok choy gets color, flip and sear other side. Add salt to taste, then set aside.
Step 4
In the same pan on medium heat, a more oil if needed. Add garlic, shallots and ginger until fragrant. Add shrimp and season with salt and pepper. Once cooked set aside.
Step 5
In a small non stick pan, add 2 eggs, tablespoon of butter and fish sauce. Turn the heat to medium-low and scramble until it is slightly runny. Set aside.
Step 6
One a plate, first add the bok choy. Next place the eggs on top of the bok choy. Add the shrimp on top of the eggs, then drizzle a little sesame oil on top and serve.
