Ingredients

2 Tbspolive oil
1onion
large, chopped
1red pepper
chopped
250gmushrooms
chopped
3garlic cloves
½ tspchilli powder
1 tsppaprika
1 tspground cumin
500gvegan mince
300mlvegan stock
400gtinned tomatoes
1 tspmarjoram dried
dark chocolate
chunk
2 Tbsptomato purée
255gtinned kidney beans

Instructions
Step 1
Heat oil on a medium heat in a deep pan. Add onion, peppers and mushrooms. Cook until onion is golden brown and veggies have softened.
Step 2
Mince garlic and add to the pan. Chuck in paprika, cumin and chilli powder. Mix and allow to cook for 5 mins.
Step 3
Add vegan mince and cook accordingly. Season generously with salt and pepper.
Step 4
Pour in stock, tinned tomatoes, marjoram, tomato purée, drained kidney beans and dark chocolate.
Step 5
Mix well, turn the heat down and leave to simmer, with a lid on, for at least 20 mins. Be sure to check that it doesn’t catch at the bottom.
Step 6
Once done serve up with whatever you’d like, I had mine with brown rice, garlic bread and sour cream & chive - enjoy!
