4 Tbspvegetable oil
1onion
1 sprigsthyme
2 Tbspchives
1bay leaves
4spring onions
4garlic cloves
750gfresh prawns
200gpancetta
2 tspsalt
1 tspblack pepper
4tomatoes
deseeded and diced
2 tsptomato puree
800mlcoconut milk
400water
1chili pepper
1lime juice

Instructions

Step 1
Steam the sweet potatoes or cook them in the microwave
Step 2
Remove the skin of the sweet potatoes and mix them in a bowl with the flour, butter and water until the dough doesn't stick (add more water or flour if necessary)
Step 3
Sprinkle flour over the worktop, create small balls with the dough and let them rest on the floured surface.

Defrost and wash the Prawns.
Step 5
In a pan big enough, add the olive oil and soften up the onion, garlic, spring onion, bay leaves at medium/low heat for 2 to 3 min. Throw in the prawn and cook until they are change they color slightly, add the bacon and cook for 5 min stirring occasionally.
Add the diced tomatoes, cook for another 2 min.
Add the water, coconut milk, salt and black pepper.
Bring it to boil

Once boiling, add the dumplings, the chili (if used) and let it simmer for 20 min, add the lime juice
Step 7
Check the seasoning and serve with the quarter of lime and parsley.
