Step 1
Boil the spinach in salty water for 5 minutes. When ready, strain and keep aside.

Beat the egg into a bowl.

Warm up a pan with the olive oil and add the spinach and the eggs. Whisk eggs and spinach adding a pinch of salt, pepper, and grated parmesan. Serve adding some more parmesan cheese.
