Lotus One Pot Jerk Chicken and Rice

Instructions

Jerk Seasoning

Step 1
To a blender add all listed ingredients for the Jerk seasoning marinade

Blend until desired texture
Step 3
Store in an airtight container. Use as needed.

Chicken

Wash chicken thoroughly

Add desired Jerk marinade
Step 6
Marinate overnight or at least 1 hour

One Pot

Preheat to 350

Add 2 Tablespoons Lotus soybean oil in a cast iron skillet or oven safe pot/pan. Then add chicken thighs skin side up , brown for about 3 minutes each side or until beautifully golden brown. Remove from the pan and set aside

Add 2 Tablespoons Lotus soybean oil in the pan, add the onion, stirring until softened then put in the garlic and stir until fragrant.

Add Lotus rice (wash rice to remove starch) stir well for a few minutes to let it toast just a bit

Cook about a minute then add the rice and stir well for a couple minutes to let it toast just a bit

Add chicken stock

Mix 1 pack good N’ natural Coconut milk and 1 cup water, then add to pot and stir

And all the remaining ingredients: Beans, Black pepper, Chive, Thyme, Paprika, Bay leaf and Salt (to taste).

Add chicken back in, bring to a boil.

Cover well with a lid or foil, and put in the oven for 30-35mins – or until the chicken is super tender and the rice prefect
