Instructions
Step 1
• Peel and cut carrots into 1/4-inch pieces.
Step 2
• Cut celery into 1/4-inch pieces.
Step 3
• Cut potatoes into 1/4-inch pieces.
Step 4
• Thinly slice chives.
Step 5
• Cut shallot into 1/4-inch pieces.
Step 6
• Mince garlic
Step 7
• In a large pot, add 4 tbsp oil over medium-high heat.
Step 8
• When the pot is hot, add shallots, carrots, celery, garlic and potatoes.
Step 9
Cook, stirring occasionally, for 5-6 min, until carrots are slightly tender.

Season with salt and pepper

Add Chowder Spice Mix and miso paste.* Cook, stirring often, for 2 min, until fragrant.
Step 12
• To the pot, add 4 cups water , then cream and vegetable stock reduction.
Step 13
Mix well to combine.
Step 14
• Bring to a simmer over medium-high.
Step 15
Once simmering, reduce heat to medium-low and cover.
Step 16
Simmer, stirring occasionally, for 10-12 min, until potatoes are almost tender and chowder has thickened slightly.
Step 17
Meanwhile, line a plate with paper towel.
Step 18
Pat fish dry, then cut into large chunks.
Step 19
• Add to chowder and continue cooking, uncovered, for 4-5 min , until fish is cooked through.
Step 20
• Serve chowder.
Step 21
Sprinkle with chives and plate toasted ciabatta alongside.
