Instructions

Step 1
Add 10ml of oil to a small pot and sweat off onions, potatoes and garlic.
Step 2
Then add thyme and butter beans to the pot and cover with 600ml of stock and simmer gently with lid on for 25mins.
Step 3
Allow to cool slightly before you blend the soup using a hand or jug blender.
Step 4
Return to the pot and use the remaining 200ml of stock to correct the consistency as desired.
Step 5
Garnish with fresh red pepper & basil if desired
