Instructions
Step 1
Heat oil over medium heat in pot
Step 2
Add garlic and onion to saute until fragrant
Step 3
Add rotel (undrained), diced tomatoes (undrained), and tomato paste and combine
Step 4
Pour in chili beans (undrained), and other beans (drained, but not rinsed)
Step 5
Add vegetable broth, bring to a boil
Step 6
Once boiling, reduce heat back to medium, cover and allow to cook (~30 minutes)
Step 7
After 30 minutes, lid can be removed to thicken if desired
Step 8
Once desired consistency, turn off heat and serve with cornbread!
