Moist Southern Cornbread

Corn Bread gets a bad name for being dry. Mentioning my cornbread, people cut me short and rant on how dry and horrible it is. Face it. Whoever made it didn't make it right, no means to be rude but when not done correctly you can be left with a bland block of loose sand paper. My mother made this since I was young and now I make it almost every week to go with soups or beans. Its soft and sweet and really there is no need to chase it down with a glass of water. So fallow instructions carefully and you'll find that its really quick and simple.

Instructions
Step 1
Starting off add the 1/4 cup of oil to a fairly large iron skillet and preheat your oven to 425. Place the skillet in the oven and let the oil warm with the oven and while that is doing its own thing turn to your mix.
Mix the cornmeal, sugar, egg, milk all in one mixing bowl with a fork.
Use a folding motion with the fork, slightly tilting the bowl to the side. (I may post a video later on)
Once it is mixed, it will be thick but liquidly, almost like quick sand. This is good.

Once your oven is preheated and your mix is sitting ready. CARFULLY take out the skillet and swirl the oil around the pan be sure to get the sides of the pan, if you don't want to hold the pan and tilt it, risking oil getting spilt, like me. (I know its not that safe but I'm too impatient.....) You can use a spoon to stir it around.

Now, picking up the pan, no choice left, (being carful) pour the oil into your batter. And as quick as you can stir with your fork again in the same folding motion until it is fully mixed. Pour it into the skillet and place into the oven for 25 to 30 minutes. Check by sticking a butter knife into the center and when it comes out clean your cornbread is done. Flip it onto a plate or cut up and serve from the skillet and butter up the top and enjoy.
