For the meatballs
350gground beef
0.5onion
finely chopped
coriander
finely chopped
salt
to taste
pepper
to taste
2 tsppaprika
½ tspnutmeg
For the soup:
2potatoes
diced
1 litrewater
1 TbspVegeta
2bay leaves
1 Tbspolive oil
0.5onion
finely chopped
2garlic cloves
crushed
1chilli pepper
3mushrooms
sliced
30gbutter
1carrot
grated
2tomatoes
grated
1 Tbsppaprika
salt
to taste
pepper
to taste
1 Tbsptomato paste
To serve:
Instructions
Step 1
For the meatballs, in a large bowl combine all ingredients, mix well and set aside.
Step 2
Add diced potato and water to the cooking pot. Set the temperature control knob on the Cusimax Double Burner to 6 and start cooking.
Step 3
In the meantime, add olive oil to the frying pan. Set the temperature control knob to 5 and start heating. When the pan is warmed up, add chopped onion, garlic and chilli pepper. Fry for 3 minutes or until the onion is softened and transparent, stirring occasionally.
Step 4
Add mushrooms and fry for another 3 minutes, or until the mushrooms are golden.
Step 5
Then add butter, when the butter is melted, add carrots and tomatoes. Mix well and add paprika, salt, pepper and tomato paste. Stir well, cover with the lid and reduce temperature to 3. Let it simmer for another 5 minutes.
Step 6
When the potato starts boiling, add Vegeta and bay leaves.
Step 7
From the meat form a small size balls and add them to the cooking pot. Bring to a boil, then reduce the temperature to 3 and cook for 15 minutes.
Step 8
Add veggie mixture to the soup, mix and cook for another 10 minutes on low heat.
Step 9
When ready, switch off the heat and let the soup brew for 15 minutes before serving.
Step 10
Serve with sour cream and coriander.
