Pressure Cooker Mexican Rice

A pressure cooker makes this delicious rice recipe quickly and easily. This dish goes perfectly with homemade enchiladas or fajitas.

Instructions

Step 1
Does the pressure cooker to saute mode when the display reads hot. Add an olive oil, onions and garlic. Saute for two to three minutes, or until garlic and onions are tender.
Step 2
Add rice and stir until coated. Add in broth, tomatoes, cumin, chili powder, paprika, salt and cilantro.
Step 3
Press the cancel button and place the lid on your pressure cooker and twist it so it locks in place and set the steam release knob to the sealing position. Press the manual button and set to 8 minutes, when the cooking cycle has finished allow the pressure cooker to naturally release for five minutes. Once the pressure cooker reads, 5 minutes, manually release by turning the knob to venting. Hot steam will be released from the valve inventing mode. Once all steam has released and the pressure valve lowers, remove the lid and serve. Take a fork and lightly fluff rice, sprinkle with cilantro, serve warm.
