for more! CHOCOLATE COVERED BLUEBERRY YOGURT CLUSTERS, the easiest little snack (blueberries + yogurt + chocolate). You can make these vegan by using vegan yogurt and you can store them in the freezer for an ice cream-ish vibe or in the refrigerator.
Here’s how to make them:
2 cups blueberries, rinsed and dried
1 cup vanilla greek yogurt
1 cup chocolate chips
1 tsp coconut oil (makes the chocolate smooth and melty)
Toss blueberries with the yogurt. In a small bowl, add the chocolate chips and coconut oil. Scoop 6-8 spoonfuls of the mixture onto a parchment-lined baking sheet. Freeze for 20 minutes. Next, melt in the microwave in 2-3, 30-second increments, until completely smooth. Take the tray out of the freezer and dip each cluster in the chocolate mixture. The chocolate will form a shell on each one. Add flaky salt on top for chef’s kiss and enjoy!
