Baked Apple with Cottage Cheese

This recipe is one from my childhood, my mum always used to make baked apples for us. She used Ukrainian Syr, which is hard to find in the UK, so I substitute it with Cottage cheese.

Step 1
Preheat oven to 190C (fan)
Step 2
Cut the top of the apple(safe it for later), using a knife and spoon remove the core and scoop out the flesh to create a well.
Step 3
In a large bowl combine cottage cheese, raisins, vanilla and honey. Mix well.
Step 4
Stuff the apples with filling, cover with the top you cut earlier and transfer to the baking dish, greased with olive oil.
Step 5
Bake for 30 minutes or until apples are tender( Don't overcook)
Step 6
Garnish with mint leaves and enjoy!
