Ingredients
1 servings
½ tablespoonolive oil
1 x 4 ounceboneless skinless chicken thigh
or use boneless skinless chicken breast, sliced into 1/2 - inch strips
¼ teaspoonkosher salt
⅛ teaspoonground black pepper
½ cuponions
chopped
1celery stalk
medium, chopped
1carrot
medium, peeled and sliced
1clove garlic
minced
1 tablespoonall-purpose flour
1 cuplow sodium chicken broth
⅔ cupbaby red potatoes
small, scrubbed and quartered
¼ teaspoonitalian seasoning
parsley
▢Optional, fresh chopped
Instructions
Step 1
In a 2-quart saucepan over medium-high heat, heat the olive oil for 30 seconds. Sprinkle the sliced chicken breast with ¼ teaspoon of salt and pepper and add to the pot. Brown the chicken on all sides, about 6 minutes total. Remove chicken from the pot and place on a plate.
Step 2
If no oil is left in the pot, add an additional ½ tablespoon of oil. Add the chopped onions, celery, carrots, garlic, and ⅛ teaspoon of salt. Cook, stirring occasionally until the vegetables have softened, about 5 minutes. Add the flour to the vegetables and cook, stirring frequently for 2 minutes.
Step 3
Pour in the chicken broth and add in the chicken, quartered potatoes, and Italian seasoning. Bring to a boil, then reduce the heat to low and simmer for 20 minutes covered, stirring occasionally until the potatoes and carrots are tender.
Step 4
Pour the stew into a bowl, taste and season with additional salt if needed. Garnish with chopped parsley if desired.
