Instructions

Step 1
Peel and slice the cucumber very thinly
Step 2
Add the cucumber slices to a bowl and sprinkle with salt. Mix well and cover the bowl with a weighted lid. Let stand for a good hour.

Rinse off the brine and add thinly sliced onion, a dash of pepper, vinegar, water and 4 or 6 ice cubes.
Step 4
Serve as a side in a small bowl or ramekin for each.
