Ingredients
3 servings
1 lbchicken thighs
or breast
4 Tbspgrapeseed oil
can sub any oil
0.5onion
chopped
4cloves garlic
minced
½ tspSriracha
or 1 tsp if you prefer more spicy, Can also sub in regular hot sauce
1 Tbsplime juice
½ cuptoasted peanuts
1 Tbspbrown sugar
salt
to taste
pepper
to taste
1 cupcoconut milk
½ tspcurry
Parsley
lime
for garnish
1 cupbasmati rice
Instructions
Step 1
Clean and cut chicken into cubes. Add salt and pepper
Step 2
Hear 2 tbsp oil in pan and add chicken. You want it to be almost fully cooked then turn down the hear to med-low.
Step 3
In separate saucepan heat 2tbsp oil and add onions. Cook until soft, about 5 minutes
Step 4
Add in garlic and cook for another minute
Step 5
Add Sriracha, lime juice, peanuts, brown sugar, salt and pepper, coconut milk. If you like a little extra spice you can add more Sriracha at this step. Mix together and turn the heat all the way down.
Step 6
Taste your sauce and adjust your spice level/saltiness here
Step 7
Add the sauce mixture to the chicken and toss together. Mix in curry powder. Allow to cook on low heat for 2 minutes. Taste and add more curry if you prefer a stronger curry taste.
Step 8
Cook rice according to package directions
Step 9
To a bowl layer your rice with peanut chicken on top. Add cilantro or parsley for garnish and drizzle lime juice
