Step 1
Melt butter in a dutch oven. Season chuck roast with salt and pepper to taste and sear in a dutch oven. Remove roast and add carrots and onion to saute until soft. Add in beef stock and red wine. Add back roast to this liquid. Cover with a lid and cook for 3 hours at 350. Remove roast and shred. Bring the broth back to a boil. Add in noodles and boil un al-dente. Add shredded roast back in along with a cup of sour cream. Stir to mix and serve!
