When it starts to feel like you're eating every meal between 2 slices of bread try this clever bowl. All the flavour of a delicious BLT without the slices.
Open for customizing: add additional veggies, cooked chicken or turkey, a little heat, some seasoned chickpeas, sunflower seeds - the options are limitless.

Ingredients
4 servings
2 cupsrice
use long grain or parboiled or try wild rice - it adds especially nice added flavour
2 cupscherry tomatoes
quartered
8 slicesbacon
reduced salt, cooked and diced
1 cupiceburg lettuce
shredded
1 cuparugula
or baby kale
1avocado
For the Sauce
Instructions
Step 1
Bring 2 cups, 1/4 tsp salt and rice to a boil. Cover, reduce to a simmer and cook for 18-20 minutes (If using wild rice follow cooking instructions on package as this type of rice usually requires longer cooking)
Step 2
While rice cooks prepare tomatoes, bacon and other toppings.
Step 3
Whisk together all sauce ingredients. Taste for seasoning and add some pepper or hot sauce if desired
Step 4
When rice is cooked fluff and divide among serving bowls. Top with bacon, tomatoes and additional toppings.
Step 5
Drizzle with sauce for serving.
